- 16 oz skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons soy sauce or liquid aminos
- 1 tablespoon Chicken Rub Seasoning
- 1 teaspoon BBQ Rub/Seasoning
- Salt and pepper to taste
- ½ green pepper, sliced
- ½ red pepper, sliced
- ½ yellow pepper, sliced
- ½ zucchini, sliced
- ¼ red onion, sliced
- 4-5 grape tomatoes
- Cooking oil spray (optional)
Instructions
- Cut the chicken breasts into 1-inch cubes.
- Marinate the chicken in soy sauce, chicken rub, BBQ seasoning, and salt and pepper for at least 30 minutes to overnight.
- Thread the marinated chicken onto skewers, alternating with veggies and a grape tomato at the top of each skewer.
- Preheat the air fryer to 350°F (175°C).
- Spray the skewers with cooking oil, if desired, to keep them juicy.
- Arrange the skewers in a single layer in the air fryer basket. Air fry at 350°F for 18-22 minutes, flipping halfway through the cooking time.
- Check the internal temperature of the chicken using a meat thermometer. It should reach 165°F for safe consumption.
- Allow the kebabs to rest for 2-3 minutes before serving.
Notes
- Ensure the chicken pieces are cut into even sizes for uniform cooking.
- If using wooden skewers, soak them in water for 20-30 minutes before cooking to prevent burning.
- Do not overcrowd the skewers in the air fryer. If necessary, cook in batches to ensure even cooking.
- If cooking from frozen chicken, increase the cook time by 8-10 minutes.
- Resting the kebabs for a few minutes after cooking will keep the chicken juicy.
