Description

Air Fryer Hash Browns From Scratch are the perfect crispy side dish for any breakfast or brunch. With fewer calories than traditional fried hash browns, these crispy patties are made from fresh potatoes and come out golden brown with minimal oil, making them a healthier and lighter option. This easy-to-make recipe ensures a crunchy exterior and tender inside, with no preservatives or additives.

Ingredients

Scale
  • 2 pounds Yukon Gold potatoes (about 4 potatoes)
  • 1 tablespoon olive oil
  • 1 red onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 2 tablespoons panko breadcrumbs

Instructions

  1. Fill a large bowl with cold water and set aside.
  2. Peel and shred the potatoes using a box grater or food processor. Place the shredded potatoes in the water and let them soak for 20 minutes to remove excess starch.
  3. Preheat the air fryer to 400°F (200°C).
  4. Drain and rinse the potatoes. Microwave for 3 minutes to soften them slightly.
  5. Transfer the potatoes to a paper towel or clean tea towel. Squeeze out any excess moisture.
  6. Return the potatoes to the bowl, then add red onion, olive oil, garlic powder, onion powder, salt, and panko breadcrumbs. Stir until everything is well combined.
  7. Spray the air fryer basket with oil to prevent sticking. Shape the potato mixture into small round patties and place them in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
  8. Air fry the hash browns for 15 minutes, flipping halfway through the cooking time, until golden and crispy.

Notes

  • Make sure to squeeze out all moisture from the potatoes to achieve maximum crispiness.
  • Feel free to customize by adding diced bell peppers, mushrooms, or spices like cumin for added flavor.
  • If you don’t have an air fryer, you can also bake the hash browns in the oven at 400°F for 20-25 minutes, flipping halfway through.
  • These hash browns can be made ahead of time and stored in the fridge or freezer for easy reheating.
