  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 3 cups rolled oats


Instructions

  1. Place butter, sugar, and diced apples in a medium frying pan. Cook over medium-high heat, stirring occasionally, until the apples are tender and golden. Spread out on a paper towel to cool.
  2. In a medium bowl, whisk together flour, cinnamon, baking soda, and salt. Set aside.
  3. In the bowl of an electric mixer, beat butter and sugars on medium-high until pale and fluffy, about 3 minutes.
  4. Add eggs one at a time, beating well after each addition. Add vanilla extract.
  5. Turn the mixer to low and gradually add the flour mixture. Mix until combined. Stir in oats and caramelized apples.
  6. Chill the dough in the refrigerator for at least one hour.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Using a medium cookie scoop, place dough on the prepared baking sheet, spacing the cookies about 2 inches apart.
  9. Bake for 12-15 minutes, or until edges are golden and the centers are soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
