Instructions
- Place butter, sugar, and diced apples in a medium frying pan. Cook over medium-high heat, stirring occasionally, until the apples are tender and golden. Spread out on a paper towel to cool.
- In a medium bowl, whisk together flour, cinnamon, baking soda, and salt. Set aside.
- In the bowl of an electric mixer, beat butter and sugars on medium-high until pale and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition. Add vanilla extract.
- Turn the mixer to low and gradually add the flour mixture. Mix until combined. Stir in oats and caramelized apples.
- Chill the dough in the refrigerator for at least one hour.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a medium cookie scoop, place dough on the prepared baking sheet, spacing the cookies about 2 inches apart.
- Bake for 12-15 minutes, or until edges are golden and the centers are soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
