Description
Apple Crumble with Brown Butter Pecan Topping is a deliciously comforting dessert that combines tart Granny Smith apples with a rich, buttery crumble. The brown butter and toasted pecans add a nutty flavor to the topping, while the cinnamon-spiced apples provide the perfect balance of sweetness and tartness. This dessert is perfect for the fall season and can be enjoyed with a scoop of vanilla ice cream or a drizzle of caramel sauce.
Ingredients
- Granny Smith Apples (2 lbs)
- Granulated Sugar (3/4 cup)
- Orange Juice (2 tbsp)
- Tapioca Flour (2 1/2 tbsp)
- Ground Cinnamon (1 1/2 tsp)
- Unbleached All-Purpose Flour (1 cup)
- Dark Brown Sugar (1/3 cup)
- Ground Cinnamon (1 1/2 tsp)
- Ground Cardamom (1/2 tsp)
- Unsalted Butter (9 1/2 tbsp, divided)
- Chopped Toasted Pecans (2/3 cup)
Instructions
- Preheat the oven to 350°F (180°C) and butter a 2.5-quart baking dish.
- To make the brown butter, place 8 tablespoons of butter in a saucepan over low heat. Cook until the butter turns golden brown, then remove from heat and stir in the remaining butter. Let it cool to about 70°F, then refrigerate until solid.
- To make the crumble, whisk together flour, cinnamon, cardamom, and salt in a bowl. Add the cold browned butter and mix until the mixture resembles large crumbs. Stir in brown sugar and pecans, then refrigerate for 30 minutes.
- For the apple filling, peel and core the apples. Cut them into cubes and toss them in a bowl with orange juice. Mix tapioca flour, sugar, cinnamon, and salt in a small bowl and add to the apples, stirring to combine.
- Spread the apple mixture evenly into the prepared baking dish. Top with the chilled pecan crumble, leaving a few gaps for the juices to bubble through.
- Bake for 40-60 minutes, depending on your preferred apple softness. The juices should be bubbling and the topping golden brown.
- Allow the crumble to cool for 20 minutes before serving. Serve with vanilla ice cream or caramel sauce if desired.
Notes
- For a sweeter crumble, mix Granny Smith apples with Golden Delicious apples.
- If you don’t have brown butter, substitute regular butter, though the flavor will not be as rich.
- Leftover apple crumble can be stored in the refrigerator for up to 3-4 days.
- The crumble topping can be made up to a week in advance and stored in the fridge.
