  • 1 tablespoon Lemon juice (for apple filling)
  • 1/2 cup Butter, unsalted (for apple filling)
  • 1/2 cup Brown sugar (for apple filling)
  • 4 Granny Smith apples, peeled and sliced (for apple filling)
  • 1/4 teaspoon Kosher salt (for apple filling)
  • 2 tablespoons Cornstarch mixed with water (for apple filling)
  • 3/4 cup Flour (for crumble topping)
  • 1/2 cup Oats (for crumble topping)
  • 1/3 cup Brown sugar (for crumble topping)
  • 1/3 teaspoon Kosher salt (for crumble topping)
  • 1 teaspoon Ground cinnamon (for crumble topping)
  • 3 oz Butter, melted (for crumble topping)


Instructions

  1. Prepare the apple filling: In a saucepan, melt butter and combine with brown sugar, cinnamon, nutmeg, lemon juice, and kosher salt. Add apples and cook for 10 minutes. Mix in cornstarch and water, then set aside to cool.
  2. Make the graham cracker crust: Blend graham crackers into crumbs, then mix with granulated sugar, cinnamon, and melted butter. Press into a 10-inch springform pan and bake at 350°F (180°C) for 7-8 minutes. Cool to room temperature.
  3. Make the cheesecake filling: Beat cream cheese with sugar and vanilla until smooth. Add eggs one at a time, then stir in sour cream and cornstarch. Mix until smooth and creamy.
  4. Prepare the crumble topping: Combine flour, oats, brown sugar, salt, cinnamon, and melted butter. Stir until a crumble forms.
  5. Assemble the cheesecake: Pour half of the cheesecake filling into the cooled crust, followed by the apple filling. Add the remaining cheesecake filling and top with crumble mixture.
  6. Bake at 280°F (140°C) for 1 hour or until the edges are set and the center is slightly jiggly. Let cool at room temperature for 1-2 hours.
  7. Chill in the fridge for at least 5 hours or overnight before serving. Serve with a drizzle of caramel sauce or powdered sugar, if desired.
