Description

This Asparagus Gruyere Tart is a stunning springtime dish featuring flaky puff pastry, nutty Gruyere cheese, fresh asparagus, and peas. It’s quick to prepare and perfect as an appetizer, brunch main, or light lunch. Finished with lemon zest and a drizzle of balsamic glaze, it’s a delicious balance of savory and fresh flavors.


Ingredients

  • 1 to 2 sheets frozen puff pastry, defrosted
  • 1 to 2 tablespoons honey dijon mustard with balsamic vinegar (or plain dijon mustard)
  • 2 to 3 cups Gruyere cheese, freshly grated
  • 1.5 pounds medium asparagus, trimmed
  • 0.5 cup peas (fresh or frozen and defrosted)
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon fresh lemon zest (optional)
  • 1 tablespoon balsamic glaze (optional)
  • 0.25 cup fresh pea shoots (optional garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the defrosted puff pastry into a rectangle and transfer to the baking sheet. If using two sheets, overlap slightly and press to seal.
  3. Lightly score a 1-inch border around the edges with a knife. Prick the center all over with a fork.
  4. Bake the puff pastry for 12–15 minutes until lightly golden. If puffed too much, gently press down the center while keeping the edges raised.
  5. Spread mustard evenly over the center of the tart and sprinkle grated Gruyere cheese on top.
  6. Arrange trimmed asparagus spears across the tart, alternating tips and ends. Sprinkle peas over the top.
  7. Drizzle with olive oil and season with salt and pepper.
  8. Return to the oven and bake for 20–25 minutes until the asparagus is tender and cheese is melted.
  9. Remove from oven, let cool slightly, and top with lemon zest and balsamic glaze if desired. Garnish with pea shoots and serve.

Notes

  • Let puff pastry thaw in the refrigerator overnight for best results.
  • If mustard with balsamic isn’t available, use dijon mustard and drizzle balsamic glaze before serving.
  • This tart is best served warm or at room temperature.
