- 1/8 teaspoon freshly ground black pepper (or to taste)
- 1/4 teaspoon paprika, for garnish
Instructions
- Slice the 6 hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a medium mixing bowl and arrange the egg whites on a serving plate.
- Add the chopped ripe avocado to the bowl with the egg yolks. Mash together with a fork until mostly smooth.
- Add 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1/4 teaspoon sea salt, and 1/8 teaspoon black pepper. Mash and stir until the mixture is creamy and well combined.
- Taste the filling and adjust seasoning if needed. For an extra smooth texture, continue mashing until no lumps remain.
- Spoon or pipe the avocado yolk mixture evenly into the egg white halves.
- Lightly sprinkle 1/4 teaspoon paprika over the filled eggs and serve immediately, or refrigerate until ready to serve.
