Ingredients

  • 2 ripe medium avocados, diced
  • 4 ounces feta cheese, cubed
  • 3 medium Roma tomatoes, seeded and diced
  • 1/3 cup diced red onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley (or cilantro)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1/2 teaspoon fine sea salt (or to taste)


Instructions

  1. Cut the feta into small cubes.
  2. In a medium bowl, combine the diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley, extra virgin olive oil, and vinegar.
  3. Sprinkle with salt and gently fold the ingredients together with a large spoon. Be careful not to mash the avocado.
  4. Transfer the dip to a serving bowl and serve with crackers, chips, or as a salad topper.

Notes

  • Make sure the avocados are ripe but firm, as too-soft avocados may mash too easily.
  • For a vegan version, swap out the feta for a plant-based alternative.
  • This dip can be made ahead and stored in an airtight container for up to 3 days. Press plastic wrap directly onto the surface of the dip to prevent browning.
