- 2 ripe medium avocados, diced
- 4 ounces feta cheese, cubed
- 3 medium Roma tomatoes, seeded and diced
- 1/3 cup diced red onion
- 2 cloves garlic, minced
- 1/2 cup chopped parsley (or cilantro)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon apple cider vinegar (or white vinegar)
- 1/2 teaspoon fine sea salt (or to taste)
Instructions
- Cut the feta into small cubes.
- In a medium bowl, combine the diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley, extra virgin olive oil, and vinegar.
- Sprinkle with salt and gently fold the ingredients together with a large spoon. Be careful not to mash the avocado.
- Transfer the dip to a serving bowl and serve with crackers, chips, or as a salad topper.
Notes
- Make sure the avocados are ripe but firm, as too-soft avocados may mash too easily.
- For a vegan version, swap out the feta for a plant-based alternative.
