Description

Avocado Toast with Bacon and Egg is a flavorful and hearty breakfast sandwich that brings together creamy avocado, crispy bacon, and a perfectly fried egg. This dish is easy to make, packed with nutrients, and versatile enough to be served at any time of day.

Ingredients

Scale
  • 1 ciabatta roll, sliced in half and toasted
  • 1 ripe avocado, pitted and mashed
  • 2 slices cooked bacon
  • 2 eggs, cooked to your preference
  • Salt, to taste
  • Pepper, to taste
  • Hot sauce, optional

Instructions

  1. Slice the ciabatta roll in half and toast the cut sides in a dry skillet until golden brown and crispy.
  2. Cook the bacon in a preheated 425°F oven until crispy. Alternatively, cook in a skillet.
  3. Slice the avocado in half, remove the pit, and mash the flesh in a bowl. Season with salt and pepper to taste.
  4. Fry the eggs to your preferred level of doneness—sunny side up, over-easy, or scrambled.
  5. Spread a generous layer of mashed avocado onto each toasted ciabatta half.
  6. Place two slices of crispy bacon on top of the mashed avocado.
  7. Top each slice with a fried egg.
  8. Drizzle hot sauce over the sandwich if desired, and serve immediately.

Notes

  • Toast the ciabatta until golden, not burnt, for the perfect crunch.
  • Feel free to swap the bacon with turkey bacon or tempeh for a lighter or vegetarian version.
  • You can store leftover mashed avocado in an airtight container for up to 2 days.
  • Customize the sandwich with additional toppings such as fresh herbs or a squeeze of lemon juice on the avocado.
