Description

A hearty and beginner-friendly breakfast casserole made with crispy tater tots, savory bacon, fluffy eggs, and melted cheese—perfect for any occasion.

Ingredients

Scale
  • 1 (32 oz) bag frozen tater tots
  • 8 slices bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/4 cup green onions, chopped (optional)
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Arrange frozen tater tots in a single, even layer across the bottom of the dish.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and dry mustard (if using) until smooth.
  4. Sprinkle cooked and crumbled bacon evenly over the tater tots.
  5. Layer shredded cheddar and Monterey Jack cheeses over the bacon.
  6. Slowly pour the egg mixture evenly over all the ingredients in the dish.
  7. Top with chopped green onions if desired.
  8. Bake uncovered for 40–45 minutes until the top is golden and the eggs are fully set.
  9. Let rest for 5–10 minutes before serving.

Notes

  • Prepare the night before and bake in the morning for convenience.
  • Tent with foil if the top browns too quickly.
  • Use thick-cut bacon for better texture and flavor.
  • Substitute bacon with vegetarian sausage or sautéed mushrooms for a meat-free version.
  • Let casserole rest after baking to help it set for easy slicing.
