Description

An easy and hearty breakfast casserole made with crispy tater tots, smoky bacon, fluffy eggs, and melty cheese. Perfect for beginners and meal prep.


Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 8 slices bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/4 cup green onions, chopped (optional)
  • Butter or nonstick spray for greasing


Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Spread frozen tater tots evenly across the bottom of the dish.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and dry mustard (if using) until smooth.
  4. Sprinkle cooked and crumbled bacon evenly over the tater tots.
  5. Top with shredded cheddar and Monterey Jack cheese.
  6. Slowly pour the egg mixture over the layered ingredients in the dish.
  7. Sprinkle green onions on top, if using.
  8. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden brown.
  9. Let rest for 5–10 minutes before serving.
