- 1 pound extra-jumbo shrimp, peeled and deveined, tails on
- 1 pound center-cut bacon (not thick cut)
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Lemon wedges (for serving)
- Toothpicks (for securing shrimp)
Instructions
- Preheat oven to 400°F. Slice bacon lengthwise into thin strips and lay on a baking sheet. Bake for 6–8 minutes until partially cooked but still pliable.
- In a bowl, mix olive oil, honey, salt, pepper, garlic powder, and smoked paprika. Add shrimp and coat thoroughly. Let sit for 5–10 minutes to absorb flavor.
- Transfer bacon to paper towels to drain excess grease. Switch oven to broil and line a clean baking sheet with parchment paper.
- Wrap each seasoned shrimp with a strip of bacon, starting at the thick end, and secure with a toothpick. Place seam-side down on the baking sheet with space between each shrimp.
- Broil for 4–6 minutes, rotating the pan halfway through. Look for crispy bacon and opaque, curled shrimp. Serve immediately with lemon wedges and dipping sauces of choice.
Notes
- Soak toothpicks in water for 10 minutes to prevent burning.
- If bacon browns too quickly, lower the oven rack.
- Can be assembled up to 4 hours in advance and refrigerated until ready to broil.
- Use fresh shrimp for the best flavor and texture.
