- 2 cups shredded chicken (rotisserie chicken preferred)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 teaspoons fresh lime juice
- 1 cup shredded cheddar or Mexican blend cheese
- 20 corn tortillas
Instructions
- Preheat the oven to 425°F (220°C). Spray a large baking sheet with nonstick cooking spray and set aside.
- In a medium bowl, combine the shredded chicken with cumin, chili powder, garlic powder, paprika, and lime juice. Stir to coat the chicken evenly with the spices. Mix in the shredded cheese until well combined.
- To prevent tortillas from cracking, warm them by wrapping two tortillas in damp paper towels and microwaving for 20-30 seconds.
- Place a heaping tablespoon of the chicken and cheese mixture in the center of each tortilla. Roll the tortilla tightly and place it seam-side down on the prepared baking sheet.
- Spray the taquitos with cooking spray and bake for 15-20 minutes or until they are golden brown and crispy.
Notes
- If tortillas crack, try microwaving them a little longer or use fresher tortillas.
- You can freeze taquitos before or after baking for easy meal prep.
- If you like spicy food, add chopped jalapeños or use pepper jack cheese.
