Description

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 medium zucchini (about 1 cup grated), moisture squeezed out
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or basil (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a baking dish with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. Heat olive oil in a skillet over medium heat, then sauté the chopped onion for 3–4 minutes until soft.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in spinach and cook until wilted, then remove from heat and let cool slightly.
  6. In a large bowl, whisk the eggs, salt, pepper, and optional herbs until well combined.
  7. Add the cooked vegetable mixture and shredded cheese to the eggs, mixing thoroughly.
  8. Pour the mixture evenly into the prepared baking dish.
  9. Bake for 20–25 minutes or until the center is set and a toothpick inserted comes out clean.
  10. Allow to cool for 5–10 minutes before slicing into finger-sized portions and serving.
