  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened (for frosting)
  • 3-4 cups powdered sugar (adjust to desired sweetness)
  • 1 teaspoon vanilla extract (for frosting)
  • 2-3 tablespoons heavy cream (optional for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Then add vanilla extract and mix in mashed bananas.
  5. Alternately add the dry flour mixture and buttermilk to the banana mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before frosting.
  8. For the frosting, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and mix until fluffy.
  9. Stir in vanilla extract. If frosting is too thick, add heavy cream 1 tablespoon at a time until desired consistency is reached.
  10. Once the cake is completely cool, frost generously with cream cheese frosting. Optionally, garnish with chopped nuts or a dusting of cinnamon.
