Description

  • 1 cup whole milk
  • 1/3 cup full-fat sour cream
  • 1 1/4 cups whipped cream (homemade or store-bought)
  • 1/8 teaspoon salt
  • 3 medium bananas, sliced
  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup vanilla wafers (optional garnish)


Instructions

  1. Crush vanilla wafers into fine crumbs and mix with melted butter until combined. Press firmly into a pie dish to form the crust and freeze for 15 minutes.
  2. In a bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Set aside.
  3. In another bowl, whisk together instant pudding mix and whole milk until smooth and thickened.
  4. Add sour cream and salt to the pudding mixture and mix until fully combined.
  5. Gently fold 1 1/4 cups of whipped cream into the pudding mixture to keep it light and airy.
  6. Remove crust from freezer and arrange sliced bananas evenly over the bottom.
  7. Spread the pudding filling over the bananas, smoothing the top with a spatula.
  8. Refrigerate the pie for at least 4 hours or until fully set.
  9. Before serving, top with remaining whipped cream, additional banana slices, and crushed vanilla wafers if desired.
  10. Slice and serve chilled.
