Description

Beef Lombardi Casserole is a hearty, comforting dish that combines seasoned ground beef, creamy egg noodles, and a blend of three cheeses. This casserole is perfect for busy weeknights or family gatherings, offering a deliciously cheesy, savory, and satisfying meal with minimal prep time.

  • 1 can diced tomatoes (14.5 oz), with juice
  • 1 can Rotel diced tomatoes & green chilies (10 oz), with juice
  • 1 can tomato paste (6 oz)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 8 oz medium egg noodles
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray.
  2. Cook the egg noodles in a large pot of salted boiling water until al dente. Drain and return them to the pot, mixing with sour cream.
  3. Brown the ground beef in a large skillet over medium heat. Drain excess fat and stir in diced tomatoes, Rotel, tomato paste, salt, pepper, onion powder, and garlic powder. Let the mixture simmer for 10 minutes.
  4. Spread the sour cream-coated noodles in the prepared baking dish. Pour the meat sauce over the noodles, spreading evenly.
  5. Mix together the shredded cheddar, Parmesan, and mozzarella cheeses, then sprinkle over the top of the casserole.
  6. Bake uncovered for 25-30 minutes, or until bubbly and golden brown. If the cheese begins to brown too quickly, tent with foil for the first half of the baking time.
  7. Let the casserole sit for 5 minutes before serving.

Notes

  • To avoid mushy noodles, cook them al dente and mix with sour cream while they’re still warm.
  • For a spicier version, add a few shakes of hot sauce, crushed red pepper flakes, or jalapeños.
  • You can use Greek yogurt as a substitute for sour cream to add more protein.
  • Feel free to swap ground turkey or chicken for the beef if you prefer a leaner option.
