- 1 can diced tomatoes (14.5 oz), with juice
- 1 can Rotel diced tomatoes & green chilies (10 oz), with juice
- 1 can tomato paste (6 oz)
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 8 oz medium egg noodles
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray.
- Cook the egg noodles in a large pot of salted boiling water until al dente. Drain and return them to the pot, mixing with sour cream.
- Brown the ground beef in a large skillet over medium heat. Drain excess fat and stir in diced tomatoes, Rotel, tomato paste, salt, pepper, onion powder, and garlic powder. Let the mixture simmer for 10 minutes.
- Spread the sour cream-coated noodles in the prepared baking dish. Pour the meat sauce over the noodles, spreading evenly.
- Mix together the shredded cheddar, Parmesan, and mozzarella cheeses, then sprinkle over the top of the casserole.
- Bake uncovered for 25-30 minutes, or until bubbly and golden brown. If the cheese begins to brown too quickly, tent with foil for the first half of the baking time.
- Let the casserole sit for 5 minutes before serving.
Notes
- To avoid mushy noodles, cook them al dente and mix with sour cream while they’re still warm.
- For a spicier version, add a few shakes of hot sauce, crushed red pepper flakes, or jalapeños.
- You can use Greek yogurt as a substitute for sour cream to add more protein.
