Description

This Berries and Cream French Toast Casserole is a decadent, make-ahead brunch recipe featuring layers of custard-soaked French bread, sweetened whipped cream cheese, and fresh mixed berries. It’s perfect for holidays, weekend gatherings, or anytime you want a delicious and easy breakfast bake that pleases a crowd.

Ingredients

Scale
  • 1 large French bread loaf (14-16 oz), cut into 1-inch pieces
  • 2 cups mixed berries (strawberries, blueberries, blackberries), diced if needed
  • 6 large eggs
  • 2 cups milk of choice
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 (8 oz) package cream cheese, softened
  • 2-3 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract (for cream cheese)
  • Cinnamon sugar, to sprinkle on top (optional)
  • Powdered sugar, extra berries, and warm maple syrup for serving (optional)

Instructions

  1. In a bowl, beat the softened cream cheese, powdered sugar, and 1/4 tsp vanilla extract until smooth. Set aside.
  2. In a separate bowl, whisk together eggs, milk, maple syrup, 1 tsp vanilla, cinnamon, and salt.
  3. Grease a 9×13 inch baking dish. Spread half of the bread pieces in the dish.
  4. Dollop half of the sweetened cream cheese over the bread, then sprinkle with half of the mixed berries.
  5. Repeat with remaining bread, cream cheese, and berries.
  6. Pour the egg mixture evenly over the top, ensuring all the bread is soaked.
  7. Cover the dish with foil and refrigerate for at least 1 hour or overnight for best results.
  8. Preheat oven to 350°F (175°C). Remove foil and sprinkle cinnamon sugar over the top if using.
  9. Bake for 45-50 minutes or until golden brown on top and set in the center.
  10. Let cool slightly, then serve with powdered sugar, extra berries, and warm maple syrup if desired.

Notes

  • Use day-old or slightly stale bread for best texture.
  • Let cream cheese come to room temperature before mixing.
  • Overnight soaking yields a more custard-like interior.
  • Use a 9×13 pan for thinner, crispier slices or a 7×11 pan for thicker, bread-pudding texture.
  • Frozen berries can be used — add directly without thawing.
