Description

Berry Crumble is a classic baked dessert made with a mix of blueberries, raspberries, and blackberries topped with a buttery, golden crumble. It delivers a perfect balance of sweet-tart fruit and crisp texture, making it an easy and comforting dessert for any season.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, frozen
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar (optional)
  • 2 cups blueberries
  • 2 cups raspberries
  • 2 cups blackberries
  • 3/4 cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 pinch cayenne pepper (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 2-quart baking dish.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Grate the frozen butter into the mixture and toss gently.
  3. Add egg yolks and vanilla extract, mixing with a fork until crumbly. Add apple cider vinegar if needed to help form clumps.
  4. In another bowl, combine blueberries, raspberries, blackberries, sugar, cornstarch, lemon juice, lemon zest, and cayenne pepper. Toss until evenly coated.
  5. Press half of the crumble mixture firmly into the bottom of the prepared baking dish.
  6. Spread the berry filling evenly over the base layer.
  7. Sprinkle the remaining crumble mixture over the berries, leaving some clumps for texture.
  8. Bake for 40–45 minutes until the top is golden and the filling is bubbling.
  9. Let cool for about 30 minutes before serving.

Notes

  • Use frozen berries if fresh are unavailable; do not thaw before baking.
  • Let the crumble cool slightly to allow the filling to set properly.
  • Serve warm with vanilla ice cream or whipped cream for best results.
  • Store leftovers covered in the refrigerator for up to 3 days.
