- 2 large egg yolks

- 2 cups blueberries
- 2 cups raspberries
- 2 cups blackberries
- 3/4 cup granulated sugar (for filling)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 pinch cayenne pepper (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 2-quart baking dish.
- In a bowl, mix flour, sugar, baking powder, and salt. Grate the frozen butter into the mixture and toss gently.
- Add egg yolks and vanilla extract, mixing with a fork until crumbly. Add apple cider vinegar if needed to help form clumps.
- In another bowl, combine blueberries, raspberries, blackberries, sugar, cornstarch, lemon juice, lemon zest, and cayenne pepper. Toss until evenly coated.
- Press half of the crumble mixture firmly into the bottom of the prepared baking dish.
- Spread the berry filling evenly over the base layer.
- Sprinkle the remaining crumble mixture over the berries, leaving some clumps for texture.
- Bake for 40–45 minutes until the top is golden and the filling is bubbling.
- Let cool for about 30 minutes before serving.
Notes
- Use frozen berries if fresh are unavailable; do not thaw before baking.
- Let the crumble cool slightly to allow the filling to set properly.
- Serve warm with vanilla ice cream or whipped cream for best results.
- Store leftovers covered in the refrigerator for up to 3 days.
