Description

This Best Italian Sausage and Herb Stuffing is a savory, aromatic side dish made with ground Italian sausage, fresh herbs, and homemade bread cubes. It’s perfect for Thanksgiving, Christmas, or any special occasion, offering a unique twist on traditional stuffing.


Ingredients

  • 1 lb good-quality sliced Italian bread
  • 1/4 cup extra virgin olive oil
  • 1/2 cup chopped onions
  • 1 cup chopped celery
  • 6 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp fresh thyme leaves
  • 2 tbsp chopped fresh sage leaves
  • 2 tbsp chopped fresh Italian flat leaf parsley
  • 16 oz ground Italian sausage
  • 3 cups chicken broth
  • 2 large eggs, whisked
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium-high heat. Add chopped onions, celery, and garlic. Sauté until soft (about 5 minutes).
  3. Add chopped rosemary, thyme, sage, and parsley to the skillet and cook for an additional minute.
  4. Stir in the ground Italian sausage. Cook, breaking it up into pieces, for about 10-15 minutes until browned.
  5. Meanwhile, place stale bread cubes in a large bowl and pour chicken broth over them. Stir to combine.
  6. Add the whisked eggs to the bread mixture and stir until evenly combined.
  7. Incorporate the sausage and vegetable mixture into the bread cubes and mix well.
  8. Transfer the mixture to a 13″x9″ casserole dish and bake, uncovered, for 30 minutes, until the top is golden brown and crispy.

Notes

  • Make sure to use fresh herbs for the best flavor. Dried herbs won’t give the same depth of taste.
  • Use good-quality Italian bread for a better texture and flavor. Stale bread works best for stuffing.
  • If you prefer a spicier stuffing, use hot Italian sausage instead of mild sausage.
  • This dish can be made ahead of time. Prepare it, cover, and store in the fridge for up to two days before baking.
