This fun and festive Birthday Cake Banana Bread is a beginner-friendly twist on classic banana bread, made with ripe bananas and colorful sprinkles.

- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup unsalted butter, melted (or oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup rainbow sprinkles (jimmies, not nonpareils)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add sugar, melted butter, eggs, and vanilla extract to the mashed bananas and whisk until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually fold the dry ingredients into the banana mixture until just combined—do not overmix.
- Gently fold in the rainbow sprinkles, reserving some for topping if desired.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle additional sprinkles on top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas with brown spots for the best flavor and sweetness.
- Use rainbow jimmies to prevent color bleeding—avoid nonpareils.
- If the top browns too quickly, tent with foil halfway through baking.
- Wrap and freeze individual slices for easy future breakfasts.
- Can be made dairy-free by using oil or coconut oil instead of butter.
