This no-bake Biscoff Tiramisu features layers of coffee-soaked Biscoff cookies and a creamy Biscoff mascarpone filling. It’s rich, indulgent, and incredibly easy to prepare with just six ingredients. Perfect for a quick dessert that impresses every time.
Ingredients
Scale
- 8 oz mascarpone cheese (226g): creamy base for the filling
- 1/2 cup Biscoff cookie butter (140g): provides rich, spiced caramel flavor
- 2 tbsp granulated sugar: adds slight sweetness to balance flavors
- 1/2 tsp vanilla extract (optional): enhances aroma and depth
- Pinch of salt (optional): balances sweetness and sharpens flavors
- 2 cups heavy whipping cream, chilled (480g): creates a fluffy, stable cream
- 50–60 Biscoff cookies: forms the dessert’s layered structure
- 1 1/2 cups strong coffee or espresso: used for soaking the cookies
Instructions
- In a mixing bowl, combine mascarpone cheese, Biscoff cookie butter, sugar, vanilla, and salt. Whisk for 30–60 seconds until smooth. Do not overmix.
- Add chilled heavy whipping cream to the same bowl. Whisk for 1–2 minutes until stiff peaks form and the cream is thick and pipeable.
- Briefly dip each Biscoff cookie in strong coffee for 1–2 seconds, then place in a single layer at the bottom of your serving dish or dessert cups.
- Spread half of the Biscoff mascarpone cream over the cookies in an even layer.
- Repeat with another layer of soaked cookies and the remaining cream.
- Optional: Reserve some cream to pipe decorative dollops on top using a star tip.
- Cover and refrigerate for at least 4 hours or overnight to set.
- Before serving, decorate with crushed Biscoff cookies and drizzle warmed cookie butter on top.
Notes
- Do not overmix the mascarpone or the cream; it may curdle.
- You can substitute cream cheese for mascarpone for a tangier twist.
- This dessert can be made 1–2 days in advance and stored in the fridge.
- For a boozy version, add 1–2 tbsp of coffee liqueur or rum to the coffee soak.
