Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch or 9×9 inch baking pan with parchment paper.
- For the crust and topping: In a medium-sized bowl, combine the oats, flour, cinnamon, salt, brown sugar, and melted butter. Mix until crumbly. Press half of this mixture into the bottom of the pan.
- For the cheesecake layer: Beat the cream cheese until smooth. Add the flour, sugar, and vanilla extract, then mix until creamy. Add the egg and beat until combined. Spread this mixture evenly over the crust.
- For the blueberry filling: Toss the blueberries with lemon juice, then add the sugar, flour, and cornstarch. Gently spread this blueberry mixture over the cheesecake layer. Top with the remaining crumble mixture.
- Bake for 55-60 minutes or until the topping is golden brown and the center is slightly jiggly. Allow to cool at room temperature for about 2 hours, then chill in the fridge for at least 4 hours before cutting into squares.
