Description

Broccoli and Cauliflower Vegetable Nuggets are crispy baked veggie bites made with nutritious broccoli, cauliflower, oats, eggs, and cheddar cheese. These healthy homemade nuggets are easy to prepare, kid-friendly, and perfect as a snack, appetizer, or lunchbox addition.


Ingredients

  • 120 g broccoli (about 1/2 head), steamed and finely chopped
  • 120 g cauliflower (about 1/2 head), steamed and finely chopped
  • 90 g oats (about 1 cup), ground into oat flour
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 50 g mild cheddar cheese (about 1/2 cup), grated
  • 1 tablespoon olive oil, for drizzling


Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper. Lightly brush or drizzle the tray with olive oil.
  2. Steam the broccoli and cauliflower for 10–15 minutes until tender but still slightly firm.
  3. Finely chop the steamed broccoli and cauliflower until they resemble small rice-sized pieces. A food processor can also be used.
  4. Transfer the chopped vegetables to a large mixing bowl.
  5. Add the ground oat flour, garlic powder, eggs, and grated cheddar cheese to the bowl.
  6. Mix thoroughly until all ingredients are well combined and form a thick mixture.
  7. Use a tablespoon or small ice cream scoop to portion the mixture onto the prepared baking tray.
  8. Press each portion gently with the back of a spoon to form nugget shapes.
  9. Drizzle the tops lightly with olive oil to help them crisp while baking.
  10. Bake in the oven for 15–20 minutes until the nuggets are golden around the edges and fully set.
  11. Allow the nuggets to cool slightly before serving. Serve warm or at room temperature.

Notes

  • Do not overcook the broccoli and cauliflower during steaming to avoid a watery mixture.
  • If the mixture feels too wet, add 1–2 tablespoons of extra oat flour.
  • Finely chopping the vegetables helps the nuggets hold together better.
  • These nuggets can be stored in the refrigerator for up to 3 days in an airtight container.
  • For freezing, place cooked nuggets on a tray until frozen, then store them in freezer bags for up to 3 months.
