Description

This Broccoli Ham Mozzarella Egg Bake is a healthy, low-carb breakfast casserole that combines broccoli, ham, mozzarella, and eggs for a delicious and filling meal. It’s perfect for meal prep, a quick breakfast, or a savory brunch option that the whole family can enjoy.


Ingredients

  • 6 cups chopped broccoli, blanched for 2 minutes and drained
  • 2 cups diced ham
  • 1 cup grated mozzarella cheese
  • 1/3 cup thinly sliced green onions (optional)
  • 10 eggs, beaten
  • 1 tsp Spike seasoning or another all-purpose seasoning blend
  • Fresh-ground black pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C) and spray a 9×12-inch casserole dish with non-stick spray.
  2. Dice the ham, slice the green onions, and grate the mozzarella cheese.
  3. Bring a medium pot of water to a boil and cook the broccoli for 2 minutes. Drain well.
  4. Layer the casserole: first, the broccoli, then the diced ham, followed by the grated mozzarella and green onions (if using).
  5. Season with Spike seasoning and freshly ground black pepper.
  6. Beat the eggs and pour over the ingredients in the casserole dish. Stir gently with a fork until everything is coated with the egg mixture.
  7. Bake for 35-45 minutes, or until the eggs are fully set and the top is lightly browned.
  8. Serve hot, or store leftovers in the fridge for up to 5-7 days.

Notes

  • Make sure to drain the broccoli well to avoid excess moisture in the casserole.
  • Feel free to substitute the broccoli with other vegetables like asparagus or spinach.
  • If you don’t have Spike seasoning, any all-purpose seasoning blend will work.
