- 6 cups chopped broccoli, blanched for 2 minutes and drained
- 2 cups diced ham
- 1 cup grated mozzarella cheese
- 1/3 cup thinly sliced green onions (optional)
- 10 eggs, beaten
- 1 tsp Spike seasoning or another all-purpose seasoning blend
- Fresh-ground black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C) and spray a 9×12-inch casserole dish with non-stick spray.
- Dice the ham, slice the green onions, and grate the mozzarella cheese.
- Bring a medium pot of water to a boil and cook the broccoli for 2 minutes. Drain well.
- Layer the casserole: first, the broccoli, then the diced ham, followed by the grated mozzarella and green onions (if using).
- Season with Spike seasoning and freshly ground black pepper.
- Beat the eggs and pour over the ingredients in the casserole dish. Stir gently with a fork until everything is coated with the egg mixture.
- Bake for 35-45 minutes, or until the eggs are fully set and the top is lightly browned.
- Serve hot, or store leftovers in the fridge for up to 5-7 days.
Notes
- Make sure to drain the broccoli well to avoid excess moisture in the casserole.
- Feel free to substitute the broccoli with other vegetables like asparagus or spinach.
- If you don’t have Spike seasoning, any all-purpose seasoning blend will work.
