These Brown Sugar Cinnamon Puff Pastries are a homemade version of the classic toaster pastry. Made with store-bought puff pastry, they are filled with a warm cinnamon-brown sugar mixture and topped with a creamy vanilla icing. - 1/2 cup (100 grams) light brown sugar
- 1 tablespoon (8 grams) cornstarch
- 2 teaspoons (5 grams) ground cinnamon
- 1 large egg yolk
- 1 tablespoon milk
- 2 sheets (450 grams) puff pastry, defrosted
- 1 cup (125 grams) powdered sugar
- 3 tablespoons (44 milliliters) heavy cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper or lightly grease it.
- In a medium bowl, combine the brown sugar, cornstarch, and cinnamon. Set aside.
- In a small bowl, whisk together egg yolk and milk to create the egg wash.
- On a floured surface, roll out one sheet of puff pastry, smoothing out any cracks or creases. Cut it into 6 equal rectangles and transfer them to the prepared baking sheet.
- Divide the cinnamon-brown sugar mixture among the pastry rectangles, leaving a small border around the edges. Brush the edges with egg wash.
- Roll out the second sheet of puff pastry and cut into 6 equal rectangles. Place these rectangles on top of the filled ones, pressing the edges to seal. Use a fork to crimp the edges and poke small holes on top of each pastry.
- Brush the tops of the pastries with the remaining egg wash and bake for 10-12 minutes until golden and puffed.
- While baking, whisk together powdered sugar, heavy cream, and vanilla extract to make the icing. If needed, adjust the consistency with more milk or powdered sugar.
- Allow the pastries to cool slightly before spreading or piping the icing over the top. Serve immediately.
Notes
- If using frozen puff pastry, be sure to thaw it overnight in the refrigerator or at room temperature for 1-2 hours before use.
- Keep the edges of the puff pastry free from filling to ensure a good seal.
- These pastries are best served warm from the oven, but they can be stored at room temperature for up to 2 days or frozen for longer storage.
