Description

These Brown Sugar Cinnamon Puff Pastries are a homemade version of the classic toaster pastry. Made with store-bought puff pastry, they are filled with a warm cinnamon-brown sugar mixture and topped with a creamy vanilla icing. Perfect for breakfast or a sweet snack, these pastries are quick to prepare and incredibly delicious.

  • 1/2 cup (100 grams) light brown sugar
  • 1 tablespoon (8 grams) cornstarch
  • 2 teaspoons (5 grams) ground cinnamon
  • 1 large egg yolk
  • 1 tablespoon milk
  • 2 sheets (450 grams) puff pastry, defrosted
  • 1 cup (125 grams) powdered sugar
  • 3 tablespoons (44 milliliters) heavy cream
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, combine the brown sugar, cornstarch, and cinnamon. Set aside.
  3. In a small bowl, whisk together egg yolk and milk to create the egg wash.
  4. On a floured surface, roll out one sheet of puff pastry, smoothing out any cracks or creases. Cut it into 6 equal rectangles and transfer them to the prepared baking sheet.
  5. Divide the cinnamon-brown sugar mixture among the pastry rectangles, leaving a small border around the edges. Brush the edges with egg wash.
  6. Roll out the second sheet of puff pastry and cut into 6 equal rectangles. Place these rectangles on top of the filled ones, pressing the edges to seal. Use a fork to crimp the edges and poke small holes on top of each pastry.
  7. Brush the tops of the pastries with the remaining egg wash and bake for 10-12 minutes until golden and puffed.
  8. While baking, whisk together powdered sugar, heavy cream, and vanilla extract to make the icing. If needed, adjust the consistency with more milk or powdered sugar.
  9. Allow the pastries to cool slightly before spreading or piping the icing over the top. Serve immediately.

Notes

  • If using frozen puff pastry, be sure to thaw it overnight in the refrigerator or at room temperature for 1-2 hours before use.
  • Keep the edges of the puff pastry free from filling to ensure a good seal.
  • These pastries are best served warm from the oven, but they can be stored at room temperature for up to 2 days or frozen for longer storage.
