Description

Brownie Cookies are rich, fudgy chocolate cookies with crackly tops and soft, chewy centers. They combine the deep chocolate flavor of brownies with the convenience of cookies, making them a quick and irresistible dessert for chocolate lovers.

Ingredients

Scale
  • 1/2 cup (113 g) unsalted butter
  • 1 1/4 cups (210 g) semisweet chocolate chips
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (90 g) mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a microwave-safe bowl, melt the unsalted butter and semisweet chocolate chips together in short intervals, stirring until smooth. Let the mixture cool slightly.
  3. In a large mixing bowl, whisk together the granulated sugar, light brown sugar, eggs, and vanilla extract until smooth and well combined.
  4. Slowly pour the melted chocolate mixture into the sugar mixture, stirring continuously until fully incorporated.
  5. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  6. Gradually mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  7. Fold in the mini chocolate chips to distribute them evenly throughout the dough.
  8. Scoop about 2 tablespoons of dough for each cookie and place them on the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes until the edges are set and the centers remain slightly soft.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overbake the cookies; slightly soft centers create the fudgy brownie-like texture.
  • Allow the melted chocolate mixture to cool slightly before mixing with eggs to prevent scrambling.
  • For thicker cookies, chill the dough for 20–30 minutes before baking.
  • You can add chopped walnuts or pecans for extra texture and flavor.
  • Store cookies in an airtight container at room temperature for up to 4 days.
