Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a microwave-safe bowl, melt the unsalted butter and semisweet chocolate chips together in short intervals, stirring until smooth. Let the mixture cool slightly.
- In a large mixing bowl, whisk together the granulated sugar, light brown sugar, eggs, and vanilla extract until smooth and well combined.
- Slowly pour the melted chocolate mixture into the sugar mixture, stirring continuously until fully incorporated.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Fold in the mini chocolate chips to distribute them evenly throughout the dough.
- Scoop about 2 tablespoons of dough for each cookie and place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes until the edges are set and the centers remain slightly soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
