- 1 lb Roma tomatoes, seeded and diced
- 2 cloves garlic, minced
- 1/2 cup fresh basil, torn
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil, divided
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 oz angel hair pasta
- 1 to 1.5 lbs boneless skinless chicken breast
- 2 tbsp balsamic glaze (optional)
- 1/4 cup grated Parmesan or mozzarella cheese (optional)
Instructions
- In a bowl, combine diced tomatoes, minced garlic, basil, balsamic vinegar, 1 tablespoon olive oil, salt, and pepper. Mix well and let it sit to marinate.
- Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente. Drain and toss with 1 tablespoon olive oil.
- Season the chicken breasts with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat.
- Cook the chicken for 4-5 minutes per side or until fully cooked (internal temperature of 165°F). Remove and let rest before slicing.
- In the same skillet, add the bruschetta mixture and cook for 1-2 minutes until slightly warmed.
- Add the cooked pasta to the skillet and toss gently to combine with the tomato mixture.
- Slice the chicken and place it on top of the pasta.
- Garnish with fresh basil, optional cheese, and drizzle with balsamic glaze before serving.
