Description

Bruschetta Chicken Pasta is a fresh and flavorful Italian-inspired dish made with juicy tomatoes, basil, garlic, tender chicken, and light pasta tossed in olive oil and balsamic vinegar. Perfect for a quick and healthy weeknight dinner.


Ingredients

  • 1 lb Roma tomatoes, seeded and diced
  • 2 cloves garlic, minced
  • 1/2 cup fresh basil, torn
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil, divided
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz angel hair pasta
  • 1 to 1.5 lbs boneless skinless chicken breast
  • 2 tbsp balsamic glaze (optional)
  • 1/4 cup grated Parmesan or mozzarella cheese (optional)


Instructions

  1. In a bowl, combine diced tomatoes, minced garlic, basil, balsamic vinegar, 1 tablespoon olive oil, salt, and pepper. Mix well and let it sit to marinate.
  2. Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente. Drain and toss with 1 tablespoon olive oil.
  3. Season the chicken breasts with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat.
  4. Cook the chicken for 4-5 minutes per side or until fully cooked (internal temperature of 165°F). Remove and let rest before slicing.
  5. In the same skillet, add the bruschetta mixture and cook for 1-2 minutes until slightly warmed.
  6. Add the cooked pasta to the skillet and toss gently to combine with the tomato mixture.
  7. Slice the chicken and place it on top of the pasta.
  8. Garnish with fresh basil, optional cheese, and drizzle with balsamic glaze before serving.

  • Do not overcook the tomato mixture to keep it fresh and vibrant.
  • Pound chicken breasts evenly for uniform cooking.
