- 1 cup unsalted butter, melted
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup butterscotch baking chips
- 3/4 cup toffee bits
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, whisk together the melted butter and brown sugar until smooth and glossy.
- Add eggs one at a time, whisking well after each addition. Stir in vanilla extract until combined.
- Sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the wet until just combined.
- Stir in the butterscotch chips and toffee bits until evenly distributed.
- Spread the batter evenly in the prepared pan and smooth the top.
- Bake for 25–30 minutes, or until the edges are golden and the center is just set.
- Let cool completely in the pan on a wire rack. Once cooled, lift out using parchment and cut into squares.
Notes
- Do not overbake — bars continue setting as they cool.
- Chill before slicing for clean edges.
- Store at room temperature for 4 days or freeze for up to 2 months.
- Swap butterscotch chips with chocolate or white chocolate for a twist.
