Description

This Caesar vinaigrette is a light and zesty twist on the classic Caesar dressing, blending olive oil, vinegars, Parmesan, and spices into a rich, savory dressing. Ideal for salads, marinades, or pasta dishes, it’s a quick and healthy meal enhancer that beginner cooks can make in minutes.

Ingredients

Scale
  • 1 cup extra virgin olive oil
  • ½ cup water
  • ¼ cup white vinegar
  • ¼ cup apple cider vinegar
  • ⅛ cup grated Parmesan cheese
  • 2 teaspoons sugar
  • 1 teaspoon anchovy paste (optional but recommended)
  • 1 teaspoon sea salt
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon paprika

Instructions

  1. Combine the Ingredients: Add all the ingredients to a quart-sized mason jar or any container with a tight-fitting lid.
  2. Shake to Emulsify: Close the lid tightly and shake the jar vigorously for about 30 seconds until the mixture looks creamy and well combined.
  3. Refrigerate Before Use: Let the vinaigrette chill in the refrigerator for at least 30 minutes to allow the flavors to develop fully.
  4. Shake Before Serving: Before each use, give the jar a good shake to re-blend the ingredients as they may separate when stored.
  5. Serve It Up: Drizzle over green salads, toss with Caesar pasta, or use as a marinade for a lemon herb chicken recipe for an easy sheet pan dinner.

Notes

  • To make the vinaigrette vegan, skip the Parmesan and anchovy paste. Nutritional yeast is a great substitute for the cheese. If you prefer a smoother texture, blend the ingredients in a food processor instead of shaking by hand. For a spicier kick, add a pinch more cayenne. Always taste and adjust seasoning to suit your palate.
