Description

Candied Pineapple Bites are chewy, sweet, and slightly spicy tropical treats made by simmering pineapple in a flavorful syrup of sugar, vinegar, and spices. Finished with a sugar coating, they’re perfect for snacking, gifting, or adding to dessert spreads.

Ingredients

Scale
  • 4 cups diced pineapple: provides natural sweetness and chewy texture
  • 2 cups granulated sugar: creates syrup and adds sweetness
  • 1/2 cup apple cider vinegar: balances sweetness with tanginess
  • 1 teaspoon ground turmeric: adds color and earthy flavor
  • 1/2 teaspoon cayenne pepper: introduces mild heat
  • 1/2 teaspoon ground ginger: enhances warmth and depth
  • Pinch of salt: sharpens and balances all flavors
  • Additional granulated sugar for coating: adds crunch and prevents stickiness

Instructions

  1. In a large saucepan, combine diced pineapple, granulated sugar, apple cider vinegar, turmeric, cayenne pepper, ginger, and salt.
  2. Stir the mixture well to coat the pineapple evenly.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently until the sugar dissolves.
  4. Reduce the heat to low and simmer for 45–60 minutes, stirring occasionally, until the syrup thickens and becomes glossy.
  5. Remove the pan from heat and let it cool slightly.
  6. Use a slotted spoon to transfer the candied pineapple pieces onto a wire rack placed over a baking sheet. Allow them to dry for 1–2 hours until tacky.
  7. Roll the tacky pineapple pieces in additional granulated sugar to coat.
  8. Place coated pieces on parchment paper and allow them to set completely before storing.

Notes

  • Use fresh pineapple for best results; canned (in juice) is acceptable if well-drained.
  • Drying time may vary based on humidity — ensure pineapple is tacky before sugar-coating.
  • Do not overcook the syrup or pineapple may become too hard.
  • Store in an airtight container at room temperature for up to 2 weeks.
