Description

Caramel Cheesecake Brownies are a rich and indulgent dessert featuring a fudgy chocolate brownie base, a smooth and creamy cheesecake layer, and a luscious caramel swirl on top. Perfect for parties or special treats, these brownies combine sweet, tangy, and chocolatey flavors in every bite.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cheesecake layer)
  • 1 large egg (for cheesecake layer)
  • 1/2 teaspoon vanilla extract (for cheesecake layer)
  • 1/2 cup caramel sauce
  • 1 pinch sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  3. Add cocoa powder and vanilla extract, mixing until fully combined.
  4. Add eggs one at a time, whisking well after each addition.
  5. Fold in flour and salt until just combined, then stir in chocolate chips if using.
  6. Pour two-thirds of the brownie batter into the prepared pan and spread evenly.
  7. In another bowl, beat cream cheese and sugar until smooth.
  8. Add egg and vanilla extract, mixing until creamy.
  9. Spread the cheesecake mixture evenly over the brownie layer.
  10. Drizzle caramel sauce over the cheesecake layer and sprinkle sea salt if desired.
  11. Drop spoonfuls of remaining brownie batter on top and swirl gently with a knife.
  12. Bake for 35–40 minutes until the center is set with moist crumbs.
  13. Cool completely, then refrigerate for 30 minutes before slicing.

Notes

  • Use room temperature cream cheese for a smooth cheesecake layer.
  • Avoid overmixing the brownie batter to keep a fudgy texture.
  • Do not overbake; brownies will continue to set as they cool.
  • Chill before slicing for cleaner cuts.
  • Store in the refrigerator for up to 5 days or freeze for up to 2 months.
