Description

  • 1 cup granulated sugar
  • 2 tsp baking powder

  • 1/2 tsp cardamom

  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup sour cream


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 square baking pan, optionally lining it with parchment paper for easy removal.
  2. In a food processor, combine the flour, sugar, baking powder, salt, and cardamom. Pulse until the ingredients are evenly mixed.
  3. Add the butter to the dry ingredients and pulse about 20 times until the mixture is crumbly with small butter pieces distributed throughout.
  4. Reserve 1 cup of the crumb mixture and set it aside for topping.
  5. In a separate bowl, whisk together the egg, milk, and vanilla extract. Then, add the wet ingredients to the dry mixture, mixing until just combined.
  6. Spread the batter evenly into the prepared pan.
  7. Top the batter with the reserved crumb mixture, spreading it out evenly over the top of the cake.
  8. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool for a few minutes before slicing and serving.

Notes

  • Ensure you don’t overmix the batter to maintain a soft and tender texture.
  • If you prefer a crunchier topping, use larger crumbs for the streusel topping.
  • This cake can be stored at room temperature for 2–3 days in an airtight container.
