Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 teaspoons homemade chai spice mix (cinnamon, ginger, cardamom, cloves)
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon chai spice mix (for coating)


Instructions

  1. In a medium bowl, whisk together the flour, baking soda, cream of tartar, salt, and chai spice mix.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy. Add the egg and vanilla extract, beating well.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Cover the dough and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C). In a small bowl, combine the 1/4 cup granulated sugar and chai spice mix.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball in the sugar and spice mixture.
  6. Place the dough balls on a baking sheet, spaced about 2 inches apart, and bake for 7 to 10 minutes until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Chill the dough for at least 30 minutes to prevent the cookies from spreading too much while baking.
  • Use unsalted butter for better control of the salt content.
  • If you don’t have a homemade chai spice mix, you can substitute with store-bought chai spice or make your own using ground cinnamon, ginger, cardamom, and cloves.
  • Store baked cookies in an airtight container at room temperature for up to 1 week.
  • For freezing, roll the dough into balls, coat in sugar and spice, and freeze on a baking sheet before transferring to a freezer-safe bag.
