Description
Cheeseburger Soup is the ultimate comfort food, blending all the classic flavors of a cheeseburger—ground beef, cheddar cheese, pickles, and savory seasonings—into a rich, creamy soup. Perfect for cozy nights, it’s easy to make and completely satisfying.
Ingredients
Scale
- 1 pound ground beef: for a hearty, savory base
- 1 medium yellow onion, chopped: adds sweetness and depth
- 2 cloves garlic, minced: for aromatic flavor
- 4 cups beef broth: forms the soup base and enhances umami
- 1 (14.5 ounce) can diced tomatoes, undrained: adds acidity and richness
- 1 (4 ounce) can diced green chilies, undrained: for a mild heat and flavor kick
- 1 teaspoon dried Italian seasoning: adds herbaceous depth
- 1/2 teaspoon salt, or to taste: for seasoning
- 1/4 teaspoon black pepper, or to taste: enhances flavor
- 4 cups peeled and cubed potatoes (about 2 large potatoes): for a filling and creamy texture
- 1 cup shredded carrots: adds sweetness and color
- 4 ounces cream cheese, softened: creates a creamy, smooth consistency
- 1 cup milk: makes the broth silky and rich
- 2 cups shredded cheddar cheese: melts into the soup for a cheesy finish
- Optional toppings: cooked bacon crumbles, sour cream, green onions
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it apart as it cooks. Drain excess grease.
- Add chopped onions and cook until translucent, about 5–7 minutes. Stir in garlic and cook for 1 minute until fragrant.
- Pour in beef broth, diced tomatoes (with juice), and diced green chilies. Stir in Italian seasoning, salt, and pepper.
- Add cubed potatoes and shredded carrots. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes or until potatoes are tender.
- Remove pot from heat. Add softened cream cheese and whisk or blend until smooth and fully incorporated.
- Stir in milk until combined. Gradually stir in shredded cheddar cheese until melted and creamy.
- Ladle into bowls and top with extra cheese, bacon crumbles, sour cream, or green onions, if desired.
Notes
- Use lean ground beef to reduce greasiness.
- Cut potatoes evenly to ensure uniform cooking.
- Do not add cheese while soup is boiling to prevent clumping.
- Soup can be made ahead and stored for up to 3 days in the fridge.
- Freeze for up to 2 months, but note texture of potatoes may change.
