Description

  • 4 large Russet potatoes, thinly sliced
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt (for potatoes)
  • 1 pound ground beef
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 3/4 cup shredded cheddar cheese (for filling)
  • 1/4 cup milk
  • 1/2 teaspoon salt (for beef mixture)
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese (for topping)


Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 9×13-inch baking dish with nonstick spray.
  2. Place sliced potatoes in a large bowl. Drizzle with melted butter and sprinkle with 1/2 teaspoon salt. Toss to coat evenly.
  3. Layer the potato slices to cover the bottom and sides of the baking dish, slightly overlapping.
  4. Bake for 20–30 minutes until potatoes are tender when pierced with a fork.
  5. Meanwhile, cook ground beef in a skillet over medium-high heat for 5–7 minutes, until browned and crumbly. Drain excess fat.
  6. In a large bowl, combine cooked beef, cream of mushroom soup, 3/4 cup cheddar cheese, milk, salt, and pepper. Mix well.
  7. Remove the potatoes from the oven and spread the beef mixture evenly over them.
  8. Return to the oven and bake for 15 minutes until heated through.
  9. Top with remaining 1/2 cup cheddar cheese and bake for 4–5 more minutes until melted and bubbly.
  10. Let rest for 5–10 minutes before serving.
