- 1 pound ground beef
- 1 cup long grain rice (cooked according to package instructions)

- 1–2 cups shredded cheese (cheddar or Mexican blend)
- 2 cans (10 oz each) cream of mushroom soup
- 1/2 cup sour cream
- Salt and pepper, to taste

- Cook the Rice: Start by cooking the rice according to the package instructions. Once it’s fully cooked, set it aside for later. Make sure the rice is nice and fluffy, as it’ll form the base of your casserole.
- Preheat the Oven: While the rice is cooking, preheat your oven to 375°F (190°C). This way, your oven will be nice and hot by the time the casserole is ready to bake.
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until it’s browned and fully cooked. While cooking, break up the beef into crumbles for better texture. Don’t forget to drain any excess fat before moving on.
- Sauté the Onion: Once the beef is cooked, add the diced onion to the skillet. Cook it until it softens and becomes translucent, about 3-4 minutes. The onions will add a touch of sweetness to the casserole, balancing out the savory flavors.
- Prepare the Creamy Sauce: In a large mixing bowl, combine the two cans of cream of mushroom soup with the sour cream. Stir everything together until smooth and well-blended. This creamy mixture is what gives the casserole its rich, comforting texture.
- Mix the Casserole Base: Now comes the fun part! Add the cooked rice, ground beef, and sautéed onions to the bowl with the creamy sauce. Stir until all the ingredients are evenly mixed. Season with salt and pepper to taste.
- Assemble the Casserole: Transfer the mixture into a greased baking dish. Spread it out evenly, making sure the rice and beef mixture covers the bottom of the dish. Then, sprinkle shredded cheese generously over the top. The more cheese, the better, right?
