Description

Cheesy Jalapeño Bites are the perfect quick appetizer made with gooey mozzarella, sharp cheddar, and a mild jalapeño kick, wrapped in crispy golden breadcrumbs. Ideal for game day or anytime you want a delicious, spicy snack that’s beginner-friendly and totally satisfying.

  • 1 cup shredded white cheddar cheese
  • 2 jalapeños, seeded and minced
  • 1 clove garlic, minced
  • ½ cup all-purpose flour
  • 2 large eggs
  • ¼ cup milk
  • 2 cups panko bread crumbs
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • Vegetable oil or another neutral oil for frying
  • Ranch dressing (optional, for dipping)

Instructions

  1. Make the Cheese Mixture: In a large bowl, combine the shredded mozzarella, white cheddar, minced jalapeños, and garlic. Mix until everything is evenly incorporated.
  2. Shape the Bites: Use your hands to form the mixture into small, tightly packed balls, about the size of a golf ball. Squeeze each one firmly so it holds its shape. Place them on a tray and freeze for at least 4 hours or until solid.
  3. Prepare the Dredging Station: While the bites are freezing, set up your coating stations. In one shallow bowl, place the flour. In another, whisk together the eggs and milk. In a third, stir the panko breadcrumbs with smoked paprika and salt.
  4. Coat the Bites: Take the frozen cheese balls out of the freezer. Roll each one first in the flour, then dip into the egg mixture, and finally coat it fully with the seasoned panko crumbs. Press gently to help the crumbs stick.
  5. Cook the Bites: Heat about an inch of oil in a saucepan over medium-high heat until it reaches 350°F. Carefully add the bites, a few at a time, and fry them for about 2 minutes per side, or until golden brown. Remove with tongs and place on a wire rack or paper towel to drain.
  6. Serve and Enjoy: Serve them immediately while hot and crispy, with ranch or your favorite dip on the side.

Notes

  • You can swap out the white cheddar with Monterey Jack, Swiss, or pepper jack for different flavor profiles. To make these vegetarian-friendly, ensure your cheese and breadcrumbs don’t contain animal-based rennet. For baking, lightly spray the bites with oil and bake on parchment paper at 400°F for 15–18 minutes. Freeze any uncooked bites in a sealed bag for future use.
