Description

Cheesy Kielbasa Hashbrown Casserole is a rich and comforting dish made with smoky kielbasa sausage, tender frozen hashbrowns, creamy soup, and melted cheddar cheese. Slow cooked until bubbly and flavorful, this hearty casserole is perfect for family dinners, potlucks, or cozy weekend meals.

  • 1 (14 oz / 400 g) package kielbasa or smoked sausage, cut into chunks
  • 1 (32 oz / 900 g) bag frozen hashbrowns
  • 1 small onion (about 100 g), diced
  • 2 cups (200 g) shredded cheddar cheese
  • 1/2 cup (120 ml) sour cream
  • 1/2 cup (120 ml) milk
  • 1 (10 oz / 283 g) can cream of mushroom soup or cream of chicken soup
  • 2 cloves garlic, minced (or 1 teaspoon minced garlic)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (50 g) shredded cheddar cheese for topping


Instructions

  1. Lightly grease the slow cooker with cooking spray or use a crockpot liner to prevent sticking and make cleanup easier.
  2. Add the kielbasa chunks, frozen hashbrowns, diced onion, and 2 cups shredded cheddar cheese into the slow cooker. Stir gently to distribute the ingredients evenly.
  3. In a medium mixing bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth and creamy.
  4. Add minced garlic, onion powder, salt, and black pepper to the sauce mixture. Stir well to combine the seasonings.
  5. Pour the creamy soup mixture over the sausage and hashbrowns in the slow cooker. Mix everything together until evenly coated.
  6. Sprinkle the remaining 1/2 cup shredded cheddar cheese over the top of the casserole.
  7. Cover with the lid and cook on LOW for 6 hours or on HIGH for 3–4 hours until the casserole is hot, bubbly, and the potatoes are tender.
  8. Let the casserole rest for about 5 minutes before serving, then scoop and serve warm.

  • Add 1/4 teaspoon paprika or cayenne pepper for a slight spicy kick.
  • You can substitute kielbasa with smoked turkey sausage or diced ham.
