Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, brown the smoked sausage slices until caramelized. Remove and set aside.
- In the same skillet, melt butter and sauté diced onions until translucent.
- Sprinkle in the flour and stir constantly for 1 minute to form a roux.
- Gradually whisk in the milk, then add seasoned salt and pepper. Cook until the sauce thickens, about 3–5 minutes.
- Reduce heat and stir in Velveeta until fully melted. Add 1 cup of cheddar cheese and mix until smooth.
- Layer the sliced potatoes and browned sausage in the prepared baking dish.
- Pour the cheese sauce over the potatoes and sausage, and stir gently to coat evenly.
- Sprinkle the remaining 1 cup of cheddar cheese on top. Optionally, dust with paprika.
- Bake uncovered for 50–60 minutes, or until the potatoes are tender and the top is golden and bubbly.
- Let rest for 5–10 minutes before serving. Garnish with chopped green onions if desired.
