Instructions
- Heat a large pot over medium-high heat and add the ground beef. Cook and crumble until browned and no longer pink. Drain any excess grease.
- Add diced tomatoes, corn, kidney beans, black beans, olives, taco seasoning, and beef broth to the pot. Stir until well combined.
- Add the Velveeta or shredded cheddar cheese and stir until melted and fully incorporated into the soup.
