Description

This Cheesy Tater Tot Meatloaf Casserole combines the best of comfort food in one dish — juicy meatloaf, crispy tater tots, sweet and smoky barbecue sauce, melty cheese, and bacon bits. A hearty, family-friendly dinner that’s easy to prepare and impossible to resist.

Ingredients

Scale
  • 1 cup ketchup: adds tangy sweetness and forms the glaze base
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce: brings smoky-sweet flavor
  • 2 lbs lean ground beef: provides a hearty and protein-rich meatloaf base
  • 30 Ritz crackers, crushed: act as a flavorful binder
  • 2 oz Lipton onion soup mix: adds bold, savory seasoning
  • 2 large eggs: help bind the meat mixture together
  • 24 oz frozen tater tots: crispy topping and texture contrast
  • 2 cups shredded mozzarella and cheddar cheese blend: melts into a gooey cheese layer
  • 1/4 cup real bacon bits: adds salty crunch and smoky taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a small bowl, mix the ketchup and barbecue sauce until well combined. Set aside.
  3. In a large bowl, combine ground beef, crushed Ritz crackers, Lipton onion soup mix, eggs, and 1/2 cup of the sauce mixture. Mix thoroughly using your hands.
  4. Press the meat mixture evenly into the prepared baking dish. Spread the remaining sauce mixture evenly over the top of the meat.
  5. Arrange the frozen tater tots in a single layer on top of the sauce-covered meatloaf base.
  6. Sprinkle the shredded cheese evenly over the tater tots, followed by the bacon bits.
  7. Cover the dish with aluminum foil and bake for 35 minutes.
  8. Remove the foil and bake uncovered for an additional 40 minutes, until the meat is fully cooked, and the cheese is bubbly and golden.
  9. Let the casserole rest for 5–10 minutes before slicing. Serve hot.

Notes

  • Use lean ground beef to avoid excessive grease.
  • Letting the casserole rest after baking makes slicing easier.
  • Check for doneness using a thermometer; internal temp should be 160°F.
  • Store leftovers in the fridge for up to 3 days or freeze for longer storage.
  • Customize with ground turkey, vegan cheese, or additional toppings like jalapeños.
