Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a small bowl, mix the ketchup and barbecue sauce until well combined. Set aside.
- In a large bowl, combine ground beef, crushed Ritz crackers, Lipton onion soup mix, eggs, and 1/2 cup of the sauce mixture. Mix thoroughly using your hands.
- Press the meat mixture evenly into the prepared baking dish. Spread the remaining sauce mixture evenly over the top of the meat.
- Arrange the frozen tater tots in a single layer on top of the sauce-covered meatloaf base.
- Sprinkle the shredded cheese evenly over the tater tots, followed by the bacon bits.
- Cover the dish with aluminum foil and bake for 35 minutes.
- Remove the foil and bake uncovered for an additional 40 minutes, until the meat is fully cooked, and the cheese is bubbly and golden.
- Let the casserole rest for 5–10 minutes before slicing. Serve hot.
