Cherry Lime Rickey is a refreshing summer drink made with fresh or frozen cherries, zesty lime juice, and optional seltzer. It combines nostalgic soda fountain charm with vibrant modern flavors.

- 2 cups pitted fresh or frozen cherries
- 1 cup granulated sugar
- 1 cup water
- 3/4 cup frozen limeade concentrate
- 1/2 cup fresh lime juice
- Seltzer (optional)
- Frozen cherries, for garnish
- Lime wheels, for garnish
Instructions
- Combine cherries, sugar, and water in a saucepan over high heat.
- Bring to a boil, reduce heat, and simmer while mashing the cherries, about 10 minutes.
- Strain the mixture into a heatproof container, pressing to extract all the juice.
- Let the syrup cool for 30 minutes.
- In a pitcher, mix cherry syrup, limeade concentrate, and lime juice thoroughly.
- For a still version, stir in 3 cups of water. For a fizzy version, mix equal parts syrup blend with seltzer in individual glasses.
- Serve over ice and garnish with frozen cherries and lime wheels.
