Description

Cherry Lime Rickey is a refreshing summer drink made with fresh or frozen cherries, zesty lime juice, and optional seltzer. It combines nostalgic soda fountain charm with vibrant modern flavors.


Ingredients

  • 2 cups pitted fresh or frozen cherries
  • 1 cup granulated sugar
  • 1 cup water
  • 3/4 cup frozen limeade concentrate
  • 1/2 cup fresh lime juice
  • Seltzer (optional)
  • Frozen cherries, for garnish
  • Lime wheels, for garnish


Instructions

  1. Combine cherries, sugar, and water in a saucepan over high heat.
  2. Bring to a boil, reduce heat, and simmer while mashing the cherries, about 10 minutes.
  3. Strain the mixture into a heatproof container, pressing to extract all the juice.
  4. Let the syrup cool for 30 minutes.
  5. In a pitcher, mix cherry syrup, limeade concentrate, and lime juice thoroughly.
  6. For a still version, stir in 3 cups of water. For a fizzy version, mix equal parts syrup blend with seltzer in individual glasses.
  7. Serve over ice and garnish with frozen cherries and lime wheels.
