Description

Chex Scotcheroos are chewy, no-bake dessert bars made with crunchy Chex cereal, creamy peanut butter, and a rich chocolate-butterscotch topping. They’re quick to prepare and perfect for parties, potlucks, or sweet snacking anytime.

Instructions

  1. Grease a large mixing bowl and add 6 cups of Chex cereal. Set aside.
  2. Grease a 9×13-inch pan and set aside for later use.
  3. In a saucepan over medium-high heat, combine 1 cup corn syrup and 1 cup sugar. Stir constantly until it just begins to boil.
  4. Immediately remove from heat and stir in 1 1/2 cups peanut butter until smooth and fully combined.
  5. Pour the hot peanut butter mixture over the Chex cereal. Gently fold to coat all pieces evenly.
  6. Transfer the coated cereal mixture into the prepared 9×13-inch pan. Press it down evenly using a spatula.
  7. In a microwave-safe bowl, combine 2 cups chocolate chips, 2 cups butterscotch chips, 1/2 cup peanut butter, and 1 teaspoon vanilla extract.
  8. Microwave in 30-second intervals, stirring after each, until smooth (about 90 seconds total).
  9. Pour the melted topping over the cereal base and spread evenly.
  10. Allow bars to cool completely at room temperature before cutting into squares.
