Description
Chex Scotcheroos are chewy, no-bake dessert bars made with crunchy Chex cereal, creamy peanut butter, and a rich chocolate-butterscotch topping. They’re quick to prepare and perfect for parties, potlucks, or sweet snacking anytime.
Ingredients
Scale
- 6 cups rice or corn Chex cereal: provides crunchy base
- 1 cup light corn syrup: binds and sweetens the mixture
- 1 cup granulated sugar: adds sweetness and structure
- 1 1/2 cups creamy peanut butter: creates a rich, nutty binder
- 2 cups semi-sweet chocolate chips: forms the top chocolate layer
- 2 cups butterscotch chips: adds buttery, caramel-like flavor to the topping
- 1/2 cup creamy peanut butter: blended into the topping for creaminess
- 1 teaspoon vanilla extract: enhances overall flavor
Instructions
- Grease a large mixing bowl and add 6 cups of Chex cereal. Set aside.
- Grease a 9×13-inch pan and set aside for later use.
- In a saucepan over medium-high heat, combine 1 cup corn syrup and 1 cup sugar. Stir constantly until it just begins to boil.
- Immediately remove from heat and stir in 1 1/2 cups peanut butter until smooth and fully combined.
- Pour the hot peanut butter mixture over the Chex cereal. Gently fold to coat all pieces evenly.
- Transfer the coated cereal mixture into the prepared 9×13-inch pan. Press it down evenly using a spatula.
- In a microwave-safe bowl, combine 2 cups chocolate chips, 2 cups butterscotch chips, 1/2 cup peanut butter, and 1 teaspoon vanilla extract.
- Microwave in 30-second intervals, stirring after each, until smooth (about 90 seconds total).
- Pour the melted topping over the cereal base and spread evenly.
- Allow bars to cool completely at room temperature before cutting into squares.
Notes
- Do not boil the syrup mixture too long or bars may become hard.
- Use fresh cereal for the best crunch and texture.
- Line your baking dish with parchment paper for easy removal and cleaner cuts.
- Store bars in an airtight container at room temperature for up to 3 days.
- For a nut-free version, use sunflower seed butter instead of peanut butter.
