Description

A quick and healthy chicken avocado melt sandwich made with juicy chicken, creamy avocado, and melted cheese, perfect for beginner cooks.

Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6–7 minutes per side until fully cooked, then let it rest before slicing thinly.
  2. Slice the avocado, red onion, and tomato. Prepare the cheese slices and set aside.
  3. Spread mayonnaise and Dijon mustard on each slice of bread.
  4. On two slices of bread, layer the chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo side down.
  5. Heat a skillet or grill pan over medium heat. Add butter or olive oil and cook the sandwiches for 3–4 minutes per side until golden and the cheese is melted. Press gently with a spatula while grilling.
  6. Remove from heat, let cool for one minute, slice in half, and serve warm.

Notes

  • Let cooked chicken rest before slicing to keep it juicy.
  • Use a panini press for evenly melted cheese and crispier bread.
  • Brush avocado slices with lemon or lime juice to prevent browning.
  • Cover the pan while grilling to help cheese melt faster.
  • Use mashed avocado if your avocados are very ripe.
