Instructions

  1. Place chicken breasts in a zip-top bag and pound to an even thickness.
  2. Add pickle juice to the bag and refrigerate for 30 minutes to 1 hour.
  3. In a bowl, whisk together milk and egg.
  4. In another bowl, combine flour, cornstarch, powdered sugar, paprika, salt, black pepper, garlic powder, and cayenne pepper.
  5. Remove chicken from marinade and pat dry with paper towels.
  6. Dip chicken into the milk and egg mixture, then dredge in flour mixture, pressing to adhere.
  7. Heat oil in a deep skillet to 350°F (175°C).
