- 1 tbsp butter
- 1 cup chestnut mushrooms, sliced
- 1/2 tsp salt
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 lb chicken breasts, skinless, boneless, sliced
- 1/4 cup white wine (dry)
- 1/3 cup chicken stock
- 1 tsp whole grain mustard
- 1 tbsp tomato paste
- 1 bay leaf
- 1 cup sour cream
- 1 tbsp chopped parsley
Instructions
- Heat the olive oil and butter in a large pan over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Stir occasionally to prevent burning.
- Add the chopped onion and garlic, and cook over lower heat for 5 minutes.
- Remove the mushrooms, onions, and garlic from the pan and set them aside.
- In the same pan, add the sliced chicken breasts with a pinch of salt. Brown on all sides over high heat for 5-7 minutes.
- Pour in the white wine and scrape the bottom of the pan to release any browned bits.
- Add the chicken stock, mustard, tomato paste, and bay leaf. Stir to combine.
- Return the cooked mushrooms, onions, and garlic to the pan. Bring to a boil, then reduce the heat and simmer.
- Stir in the sour cream and chopped parsley. Let the mixture simmer for 5 minutes or until the sauce thickens to your desired consistency.
Notes
- Make sure to brown the mushrooms properly for a rich flavor.
- If you find sour cream too tangy, use half sour cream and half heavy cream for a milder sauce.
- Use dry white wine for the best flavor. If you prefer not to use wine, substitute with apple juice and a tablespoon of white wine vinegar.
