Description

Chicken Stroganoff with Mushrooms is a creamy, comforting dish featuring tender chicken breasts, earthy mushrooms, and a velvety sour cream sauce. This recipe is a lighter twist on the classic beef stroganoff, offering a rich and flavorful meal that is perfect for family dinners or special occasions.

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup chestnut mushrooms, sliced
  • 1/2 tsp salt
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 lb chicken breasts, skinless, boneless, sliced
  • 1/4 cup white wine (dry)
  • 1/3 cup chicken stock
  • 1 tsp whole grain mustard
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 1 cup sour cream
  • 1 tbsp chopped parsley


Instructions

  1. Heat the olive oil and butter in a large pan over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Stir occasionally to prevent burning.
  2. Add the chopped onion and garlic, and cook over lower heat for 5 minutes.
  3. Remove the mushrooms, onions, and garlic from the pan and set them aside.
  4. In the same pan, add the sliced chicken breasts with a pinch of salt. Brown on all sides over high heat for 5-7 minutes.
  5. Pour in the white wine and scrape the bottom of the pan to release any browned bits.
  6. Add the chicken stock, mustard, tomato paste, and bay leaf. Stir to combine.
  7. Return the cooked mushrooms, onions, and garlic to the pan. Bring to a boil, then reduce the heat and simmer.
  8. Stir in the sour cream and chopped parsley. Let the mixture simmer for 5 minutes or until the sauce thickens to your desired consistency.

Notes

  • Make sure to brown the mushrooms properly for a rich flavor.
  • If you find sour cream too tangy, use half sour cream and half heavy cream for a milder sauce.
  • Use dry white wine for the best flavor. If you prefer not to use wine, substitute with apple juice and a tablespoon of white wine vinegar.
