Ingredients
Scale
- 1 1/2 cups (188g) all-purpose flour
- 1/2 cup (40g) Dutch-process cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 3/4 cup (168g) unsalted butter, softened
- 3/4 cup (165g) light brown sugar, packed
- 1/4 cup (50g) granulated white sugar
- 2 egg yolks, at room temperature
- 1 1/2 tsp vanilla extract
- 5 oz dark chocolate with cherry (such as Endangered Species Chocolate Vibrant Cherries + Dark Chocolate), chopped
- 1/4 cup + 2 tbsp (90ml) heavy cream
- 1/4 cup (85g) cherry preserves
Instructions
- In a medium bowl, whisk together flour, cocoa powder, salt, and baking powder. Set aside.
- In a large bowl, cream softened butter, brown sugar, and white sugar using an electric mixer until light and fluffy.
- Add egg yolks and vanilla extract. Mix on medium speed until fully incorporated.
- Gradually add the dry ingredients into the wet mixture. Mix on low speed until a soft dough forms.
- Scoop dough into 32 tablespoon-sized portions. Roll into balls and use a 1/4 tsp to press an indent into each.
- Chill shaped dough for 1 hour in the refrigerator.
- Preheat oven to 350°F (175°C). Place 12 cookies per parchment-lined baking sheet and bake for 10 minutes.
- Immediately after baking, press the center again with a 1/4 tsp to maintain the indent. Use a cookie cutter to round edges if desired.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Meanwhile, heat heavy cream in a saucepan until just boiling. Pour over chopped chocolate in a bowl.
- Stir the chocolate until melted and smooth. Mix in cherry preserves to complete the ganache.
- Fill each cooled cookie center with about 1 teaspoon of ganache.
- Chill the cookies for 10–15 minutes to allow the ganache to set before serving.
Notes
- Measure flour correctly by spooning into a cup and leveling off, or weigh for accuracy.
- Chilling the dough helps prevent spreading and improves texture.
- Use high-quality chocolate for the ganache for the best flavor and smooth texture.
- Pressing cookie centers again after baking ensures space for the ganache.
