Description

Chocolate Easter Bird’s Nest Cookies are easy no-bake treats made with semi-sweet chocolate chips, peanut butter chips, crunchy chow mein noodles, and chocolate mini eggs. These festive Easter cookies come together quickly, require no oven time, and deliver a rich chocolate-peanut butter flavor with a crispy texture.


Ingredients

  • 12 oz (2 cups) semi-sweet chocolate chips
  • 12 oz (2 cups) peanut butter chips
  • 12 oz (about 5 cups) chow mein noodles
  • 9 oz (about 60 pieces) Cadbury chocolate mini eggs


Instructions

  1. Combine 12 oz semi-sweet chocolate chips and 12 oz peanut butter chips in a large microwave-safe bowl. Microwave at 50% power for 1 minute, then stir well.
  2. Continue microwaving in 30-second intervals at 50% power, stirring after each interval, until the mixture is fully melted and smooth.
  3. Add 12 oz (about 5 cups) chow mein noodles to the melted chocolate mixture and stir gently until all noodles are evenly coated.
  4. Line two baking sheets with parchment paper. Scoop about 1/4 cup of the mixture onto the prepared sheets for each nest.
  5. Use the back of a spoon to shape each mound into a nest, creating a small indentation in the center.
  6. Place 3 chocolate mini eggs in the center of each nest while the chocolate is still soft.
  7. Refrigerate the nests for 10–15 minutes, or until the chocolate is fully set. Serve after allowing them to sit at room temperature for 10 minutes.

Notes

  • Always melt chocolate at 50% microwave power to prevent scorching or seizing.
  • If the mixture becomes too firm while shaping, warm it briefly to soften.
  • Store cookies in an airtight container in the refrigerator for up to 3 weeks, separating layers with parchment paper.
