Description

Chocolate Lava Brownie Cookies are rich, fudgy cookies with glossy crackled tops and a gooey molten chocolate center. Combining the texture of brownies with the indulgent filling of lava cake, these cookies are perfect for chocolate lovers and easy to prepare with simple pantry ingredients.

Ingredients

Scale
  • 1/2 cup (113 g) unsalted butter
  • 12 oz (340 g) semi-sweet chocolate chips
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (110 g) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (90 g) extra chocolate chips for filling

Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. Melt the unsalted butter and 12 oz semi-sweet chocolate chips together in a microwave using short bursts or over low heat on the stovetop. Stir until smooth and allow it to cool slightly.
  3. In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth and slightly thickened.
  4. Slowly pour the melted chocolate mixture into the sugar mixture and stir until fully combined and glossy.
  5. In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
  6. Gently fold the dry ingredients into the chocolate mixture until just combined. Do not overmix.
  7. Chill the dough in the refrigerator for 15 minutes to make it easier to shape.
  8. Scoop portions of dough and roll them into balls. Press several extra chocolate chips into the center of each ball to create the molten lava filling.
  9. Place the dough balls on the prepared baking sheet, leaving space between them.
  10. Bake for 10–12 minutes until the tops are glossy and slightly cracked while the centers remain soft.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overbake the cookies to maintain the gooey lava center.
  • Chilling the dough helps the cookies keep their thick brownie-like texture.
  • Use high-quality chocolate chips for the best flavor.
  • For a deeper chocolate taste, substitute semi-sweet chips with dark chocolate.
  • Store cookies in an airtight container for up to 3 days and warm briefly before serving for a molten center.
